PRODUK-PRODUK KARBONISASI DARI KAYU ANGGRUNG (Trema orientalis(L.) BLUME)
This research aim were to determine the processing of Anggrung wood as a raw material for making liquid smoke, rendemen of liquid smoke produced from Anggrung wood and physical -chemical properties contained in the liquid smoke anggrung wood. Physical-chemical analysis of liquid smoke covers the value of rendemen, pH, specific gravity and color compared to the quality of wood vinegar by Japanese standards and testing and analysis of chemical components contained in the liquid smoke carried out with GC-MS method. It was observed that some properties and the quality of liquid smoke Anggrung wood such as pH and the color s for grade III, II and I, according to the Japanese standard, while for the gravity of the third grade at not accor di ng
to the Japanese standard.
The main chemical components contained in the liquid smoke Anggrung wood grade III is acetic ac i d, b ecaus e
liquid smoke still contains a few compounds Polycyclic aromatic hydrocarbons (HPA), then it should only be used
as a natural preservative material for non-food category.
Phenol compound is the main chemical components contained in the liquid smoke Anggrung wood gr ade II, s o
liquid smoke grade II can be used as an antioxidant that can extend the shelf life of asapan products.
The main chemical components contained in the liquid smoke Anggrung wood grade I is acetic acid, without the
content of Polycyclic aromatic hydrocarbons (HPA), which can be used as a natural preservative for food and non
food category because these components are anti-bacterial and anti-fungi.
